This is ....a favourite recipe I would like to share.

I'm in a savory kind of mood and this was a recipe I found years ago on the Internet whilst researching for inspiration for our then vegetarian palette...(changed since having children!)

This is the ideal seasonal pasta. The flavour's are fabulous and the heat of the pasta softens the cheese beautifully, allowing it to mix well with the herbs, cherry tomatoes and goats cheese.

A great favourite at Barbeque's or as a summer meal with a crisp glass of white wine....

ingredients:

500g dried fettuccine
4 tablespoons olive oil
4 gloves of garlic, minced
4 spring onions, finely sliced
1 cup chopped parsley
3 tablespoons fresh mint leaves
4 punnets cherry tomatoes, halved
200g mild goats cheese crumbled or cubed

method:

Do all chopping, dicing and mincing prior to putting all ingredients together.

In a large saucepan of boiling salted water, cook the fettuccine until it is al dente.

While the fettuccine is cooking, heat the oil and minced garlic in a small saucepan over a low heat until the mixture is hot. Remove pan from heat.

Drain the fettuccine well and in a large bowl (salad bowl is good) toss with the olive oil & garlic the chopped mint, parsley, spring onions, cherry tomatoes and goats cheese with salt and pepper to taste.

Serve immediately with additional garnish of parsley, chives and grated Parmesan cheese.
